Notes on Potatoes
I am possibly the world's worst for buying a huge bag of potatoes, only to let in sprout in my bin before I have a chance to use it. This week, however, I have been uber-productive and have managed to deal with all my potatoes before they "turned". I bought a 3lb. bag of reds, and as soon as I got them home, I cleaned them, cu them, and boiled them all. Half of them became potato salad; the other half became mashed potatoes to be frozen for later use. FROZEN MASHED POTATO TIP: Freeze individual servings in a well greased muffin tin. When throughly frozen, pop out of tin and place in plastic freezer bag. Reheat by placing individual muffin-sized servings in the microwave for 45-60 seconds or until heated through. Now you have instant home-made mashed potatoes any time you want and no sprouts in your potato bin!
Planning for a hike
Anyone who really knows me knows what a fan I am of recipes. Today, while doing some research for a potential long hike with my dad, I stumbled across www.trailcooking.com and discovered some awesome make-ahead recipes that will make camp cooking really fun. The more I read, the more excited I get. I love the idea of making my own "just add water" meals without having to go and buy freeze dried stuff from the sporting goods store. I am so excited to get some hiking done and put a few of these recipes to the test!
